Comment:

 As mentioned a key with the same attributes worked in the past.
 And I get the same result generating a key with prosody's built-in
 certificate command. If those are the wrong extensions, I'm going to file
 a bug report for prosody.

 My certificate has the following extensions:

 Prosody's mechanism gives me the same attributes
